The Chardonnay and Pinot Noir grapes were selected from premium districts,including Buckland Valley (VIC), Cowra (NSW)and Adelaide Hills (SA).Harvested in the cool of night,minimal juice contact with the skins and gentle pressing produced juices of elegance,finesse and delicate fruit flavour.These juices were fermented separately using a yeast strain isolated in Champagne, to produce delicate base wines,which then underwent secondary fermentation in bottle. |
